Persimmon Pudding

Ingredients

  • 2 C. persimmon pulp
  • 1 C. sugar
  • 4 tbsp. butter
  • 2 eggs beaten
  • 1 C. milk
  • 2 C. flour
  • 2 tsp. cinnamon
  • 2 tsp. baking powder
  • 1/2 tsp. vanilla extract

Method

Step 1

Preheat oven to 325 degrees F (165 degrees C).

Step 2

Cream sugar and butter, add pulp, eggs

Step 3

Beat well and add milk

Step 4

Combine flour, cinnamon, baking powder, vanilla extract.

Step 5

Pour into long baking dish that has been greased and floured.

Step 6

Pour into baking pan and bake for 55 minutes. The pudding will rise but will fall when removed from oven.
