Ingredients

  • 2 C. sugar
  • 2 tsp. cinnamon
  • 1 tsp. salt
  • 2 C. Flour
  • 2 tsp. baking soda
  • 2 tsp. baking powder
  • 1 1/2 C. Vegetable oil
  • 4 eggs
  • 3 C. grated carrots
  • Optional candied walnuts
  • ICING
  • 2 C. brown sugar
  • 1 tsp. vanilla
  • 1/2 C. butter or margarine
  • 1/2 C. milk

Method

Step 1

Sift dry ingredients together.

Step 2

Mix the oil and egg with the dry ingredients. Beat 5 or 10 minutes. Add carrots and nuts and mix well. Bake at 350 degrees until done

ICING

Step 4

Bring the ingredients to a boil and boil 2 minutes.
